Ham Salad Croissants


Ingredients

  • 3 cups ground fully cooked ham
  • 2 cups (8 ounces) shredded cheddar cheese
  • 2 celery ribs, finely chopped
  • 8 green onions, chopped
  • 1/3 cup unsalted sunflower kernels
  • 1/3 cup finely chopped green pepper
  • 1/3 cup chopped dill pickle
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1 jar (4 ounces) diced pimientos, drained
  • 1 teaspoon ranch salad dressing mix
  • 1 teaspoon coarsely ground pepper
  • 1 teaspoon minced fresh parsley
  • 8 lettuce leaves
  • 8 croissants, split

Directions

  1. In a large bowl, combine the first seven ingredients. In a small bowl, combine the mayonnaise, sour cream, pimientos, salad dressing mix, pepper and parsley. Pour over ham mixture; toss to coat. Serve on lettuce-lined croissants. Yield: 8 servings.

Strawberry Chicken Salad


Ingredients

  • 2 cups cubed cooked chicken breast
  • 2 celery ribs, thinly sliced
  • 1/4 cup chopped red onion
  • 1/3 cup reduced-fat mayonnaise
  • 2 tablespoons chutney
  • 2 teaspoons lime juice
  • 3/4 teaspoon grated lime peel
  • 3/4 teaspoon curry powder
  • 1/2 teaspoon salt
  • 2 cups sliced fresh strawberries
  • 4 Bibb or Boston lettuce leaves




Directions

  1. In a large bowl, combine the chicken, celery and onion. In a small bowl, combine the mayonnaise, chutney, lime juice, lime peel, curry and salt. Add to chicken mixture and toss to coat. Cover and refrigerate for at least 1 hour.
  2. Just before serving, stir in strawberries. Serve on lettuce-lined plates. Yield: 4 servings.

Tabbouleh



(Arabic: تبولة‎; also tabouleh or tabouli) is a Levantine Arab saladdish, often used as part of a mezze. Its primary ingredients are finely choppedparsley, bulgur, mint, tomato, scallion (spring onion), and other herbs with lemonjuice, olive oil and various seasonings, generally including black pepper and sometimes cinnamon and allspice.
